What to do when you’ve got a cup of peas left…only a couple of slices of bacon & need something quick for dinner? Go back to basics. Fried rice!

Delicious on it’s own as a super fast, lighter option for dinner or served as a side, the beauty of making a big pot of fried rice is it’s versatility. It’s a great option for big families with lots of little growing bodies to feed and if there’s any leftovers you’ve got lunch sorted for the next day.

I recommend doubling or tripling the recipe if you want something you can use as leftovers during the week, or if you have a big family!

Ingredients

1 1/2 c basmati rice & a drizzle of sesame oil (To hasten the process boil the kettle or use leftover cooked rice) cook until tender, spread onto a tray to dry out.
1 tbsp. sesame oil
2-3 slices of bacon, chopped roughly
1 c peas
1 c corn
1 small brown onion, diced

Directions

Cook the rice in a large pot of boiling water (or use leftover cooked rice). Once cooked spread the rice out on a large sheet of baking paper or a tray to dry.

Heat sesame oil in a pan, cook the bacon and add veggies - sauté briefly before adding rice.

Mix bacon and vegies through the rice, make sure the rice is heated through and serve.
