Real men don’t eat quiche

That said, real men do eat quiche – or my husband isn’t real.

It’s super quick and far too easy for this to taste so good, but it’s true – which makes it a great option when you have to whip something up for late notice guests or a lazy weekend lunch that provides plenty of leftovers for the week ahead.

It’s also a great way to encourage kids that say they don’t like zucchini slice (me as a child) – and when they say they like this version of quiche, perhaps they might also like zucchini slice?

Ingredients

6 extra large free range eggs
250gm diced rindless bacon
1/2 cup fresh chopped chives
1 firmly packed cup grated vegan cheese (We used BIO brand)
salt and pepper

Directions

Preheat oven to 200 degrees Celsius (fan forced).

Lightly grease a quiche/pie tin.

In a large mixing bowl, add bacon, cheese and chives.

In a separate bowl crack the eggs, whisk gently until incorporated and add salt and pepper to taste.

Pour egg mix into the large mixing bowl and stir well until all ingredients are coated.

Pour mixture into greased dish.

Bake for 30 minutes or until a skewer inserted in the middle comes out clean and dry.

Allow to cool in the dish for 5-10 minutes, or slice and serve hot.

Refrigerate or freeze leftovers.
