BBQ Tomato, Zucchini & Squash

A simple, delicious addition to any Summery meal, I couldn’t help caption this “Shades of Summer” given tomatoes are a main product of the nightshade family and of course, it’s a lighter option for those warm light filled evenings.

It’s ridiculously simple and it can be chucked on the barbi – as we Aussie’s would say, along with everything else. Just keep in mind they don’t take long and will require a couple of checks to toss together and ensure even cooking.

It goes beautifully with grilled chicken or white fish, or just use it as an easy alternate side dish for any gathering that involves a BBQ.



2-3 medium zucchini, sliced
3 tomatoes, sliced
8-10 button squash
1 tbsp. olive oil
salt & pepper to season
1 tbsp. balsamic vinegar (OPTIONAL)


Toss together on a bbq tray, season with salt and pepper and a drizzle of olive oil (add balsamic if desired).
Place tray directly on BBQ and leave for 15 minutes or until everything has cooked down, toss occasionally to make sure you don’t char it!
