I say soothing, because I make this soup when the weather is forecasting consecutive single digit, wet and cold days, and when I feel like I need a good doe of vegies!

Soothing, filling, especially when you’re not feeling too great this flu season!
We’ve got 7 types of vegetables packed into this delicious soup, it could have been 8 but I didn’t have any celery – and that’s a usual ingredient for soup so by all means add a couple of chopped up celery stalks and throw them in when you’re sweating the leeks.
All up, this made over 3 litres of soup – I didn’t check exactly the number however, but rest-assured there are many, many serves!
1 large sweet potato |
1 large zucchini |
6 yellow button squash |
2 leeks |
125g tin corn, drained |
1 large carrot |
3 C packed spinach leaves |
2cm. ginger |
3 bay leaves |
Small bunch of thyme, about 8 sprigs |
2 tbsp. extra virgin olive oil OR 1 tbsp. organic unrefined coconut oil |
2 garlic cloves |
1 tsp. white pepper |
1 tsp. sweet paprika |
pinch black pepper |
2 L vegetable stock |
1 L water |
