The name says it all, this is super fast to whip up when you’re not sure what to have for dinner – when it’s been a long day or when you’ve got a bunch of hungry kids to satisfy!
What’s more is it’s easy to make more so that you’ve got leftovers to freeze or use for lunches the following few days – just make sure you’ve got a big enough pan.
For this recipe we used what was handy and kept it basic, capsicum and beans. If you’re not a fan we absolutely recommend snow peas, carrot, zucchini, baby corn, kale or broccoli (or just make it a vegie version and go for the lot)! Yummmmmm
