Completely from scratch and incredibly satisfying, easy to freeze for no-cook nights and guaranteed to be enjoyed by all.

If you grow your own tomatoes this is definitely a recipe to double, because once the tomatoes start to grow…they don’t seem to stop.

If you don’t grow tomatoes, give it a go. They don’t require much maintenance and as mentioned, once they start they don’t stop. We have never spent more than $5 on seedlings – that gave us three plants, and an abundance of options. And though we have so many tomatoes, we use them all.

Easy to grow and with endless options to eat, the best tomatoes are fresh and homegrown.

Ingredients

500gm organic (grass fed gluten free) extra lean premium mince
10 whole ripe tomatoes
3 fresh garlic cloves – or 2 tsp. minced jar garlic
Salt and pepper to taste
¼ cup fresh chives
½ cup fresh basil
½ cup fresh parsley
1 cup dry white wine
1 tsp stock powder or 1 cup homemade stock
1 brown onion
4 dry bay leaves

Directions

Chop onion finely.

Mince 2-3 garlic cloves with the back of a knife (or use a garlic mincer)!

Roughly dice the chives, basil and parsley.

Roughly chop the tomatoes.

In a large pot add the tomatoes, onion, garlic, herbs and salt and pepper to taste.

Add the wine, water and the stock.

Stir well.

Place bay leaves on top and gently mix through.

Bring to a simmer and stir occasionally for 30 minutes - or until tomatoes are reducing.

Once the tomatoes have reduced, use tongs to pick out the bay leaves (set aside) and then use a bench top blender or a stick blender to puree the mixture in the pot.

Place the sauce back on the stove and bring to a simmer again.

Add the mince.

Stir until the mince has broken up through the sauce.

Leave for further 20 minutes on a low simmer.

Once cooked, serve hot over spaghetti – use for lasagne – nachos - tasty enchiladas or freeze for later use.
