There’s always going to be one of those days when we’re so busy that dinner escapes us.. or we have ‘nothing’ in the fridge… or are just so tired that we can’t be bothered.

But before you whip out your wallet and order in, check this recipe. It’s quick, easy and requires no rising time – you can make pizza at home, know exactly what it contains andĀ in less than the time it takes to order and pick up or deliver! Not to mention there’s no need to worry about cross-contamination or your order getting mixed up…

And what’s more, it’s versatile.

Hosting guests and need a starter that doesn’t compromise time spent with friends and family? Add a little garlic to the base recipe, blind bake, top with a little extra virgin olive oil and some fresh herbs, bake for another 10 and done!

Kids having a sleepover? They need never know it’s gluten or dairy free – it’s just pizza! Get the kids involved and get them mixing and topping their bases with their own favourite ingredients.

Footy fever? Pizza party, no worries. You’ll beĀ kicking goals in the kitchen without even missing a moment. This recipe is easily doubled or tripled, so cooking for a crowd is even simpler.

There are never no ingredients to top your pizza with – from leftovers to simple veg, to a meaty bonanza – there’s always something. Our latest creation? We smeared some leftover beef ragu, a few herbs and topped with soy cheese. It was ready from start to finish within 40 minutes!

Ingredients

1 1/2 c. gluten free all purpose (plain) flour
1/2 c. unsweetened almond milk
1 tsp. baking powder
1 egg
pinch salt & pepper
50gm nuttelex

Directions

Preheat oven to 200 degrees Celsius (fan forced).

Sift flour and baking powder into a bowl.

Add salt and pepper and whisk well in incorporate air.

Form a well, add the egg, milk and softened nuttelex.

Mix until a dough forms.

Turn out onto a lightly floured surface and knead briefly. The mixture will be somewhat sticky.

Line a pizza/rectangular tray with grease proof paper. Add the pizza dough and roll/push out to your desired thickness.

Blind bake for 10 minutes.

Remove from oven and top with your choice of sauce and toppings before baking again for a further 15-20 minutes (or until toppings are fully cooked).
