Description

If there’s one recipe that should definitely be made for a house full of gluten-free haters, this is it. Invite every friend who has ever told you that gluten free food is worse than chewing cardboard and then revel in the glory at the shock on their faces when you dig into one of these sticky date puddings along with them!

Now, we’ve made these a few times now…and on every single occasion those around the table who aren’t big fans of gluten free food have devoured their dessert and the best line I’ve heard so far when serving these was this:

You can’t eat that!

Cue my childlike excitement – they think it’s made using ‘normal’ ingredients!!!! My work here is complete and the satisfaction felt hearing those 4 words was just as delicious as the dessert itself.

P.S. and you won’t believe how fast they are to make!

Ingredients

100 gm dates
1 tsp. McKenzies bicarb soda
100 gm gluten free self raising flour
1 egg
½ c. boiling water
2 tbsp. vegan Tofutti
2 tbsp. pure maple syrup
2 tbsp. nuttelex
½ tsp. vanilla
½ tsp. salt flakes

Directions

Preheat oven to 180 degrees Celsius (fan forced).

Roughly chop the dates.

In a microwave safe jug add the dates, bicarb & boiling water. Mix gently to coat the dates. Allow to cool slightly.

Add the flour and the egg. Mix briefly, until a batter forms.

Grease a muffin tin and pour batter in until ¾ full.

Bake for 10 minutes or until risen, tops are golden and a skewer comes out clear (max 15 minutes).

While baking puddings make the butterscotch:

Combine all the ingredients for the butterscotch sauce in a small pot and bring to a simmer on medium heat, whisking gently as the ingredients melt. Continue stirring while the mixture thickens and bubbles for a further 5 minutes.

Remove puddings from the oven and allow to cool briefly before turning them out and placing them in bowls for serving.

Once the butterscotch sauce has reduced and thickened, pour hot over warm sticky date puddings and serve immediately.

Optional: Stir handful of extra dates through the butterscotch when it is bubbling and spoon atop the sticky date pudding before pouring the butterscotch sauce over.
