XMAS Turkey Balls

Save yourself the oven space and make these turkey balls ahead of time and have the option to serve hot or cold!

A Christmassy twist on Turkey!

If you’ve got a large gathering, one turkey just isn’t enough – and then there’s the oven space and who gets the best bit war… Cheaper than the real deal, guaranteed to serve all on the day, this twist on Turkey is a delicious ‘help-yourself’ addition to the banquet.

Ingredients

500gm turkey mince
1 small onion
1 fresh garlic clove
1 ¼ C dried cranberries
¼ C loosely packed fresh parsley
1 egg
S & P, to taste
1 C polenta or gluten free bread crumbs
½ tsp. powdered cumin
½ tsp. ground fennel seed
1/2 tsp. ground sage

Directions

Preheat the oven to 180 degrees (fan forced) or gas mark 4.

Line a large, flat, oven tray with baking paper and lightly spray with oil (we used extra virgin olive).

Place polenta or breadcrumbs in a large shallow bowl.

Finely dice the onion. (or use a food processor)

Crush the garlic clove with the back of your knife and continue to finely dice. (if using food processor, add the garlic without mincing or dicing to the processor)

Add onion and garlic to a large mixing bowl along with cranberries. Roughly chop the parsley and add to the bowl.

Add the ground herbs to the bowl.

Season to your liking with salt and pepper.

Add the turkey mince and egg to the bowl. Mix well until all ingredients are incorporated and no cranberries are falling out of mixture.

Roll heaped teaspoons of mixture with your hands, into a ball.

Roll each ball in the polenta or breadcrumbs until coated and place on baking tray.

Repeat until all balls are formed.

Place tray in oven for 30 minutes, turn at 15 minutes.
